    PASTRY HEAD / SOUS CHEF – AWARD WINNING RESTAURANT – DORKING £25-29K The Role: Recruiting a passionate, talented and dedicated Pastry Head / Sous Chef for an award winning Restaurant in Dorking, you will oversee the running and the service of the 2 AA Restaurant, Afternoon Teas as well as Bar Food and the Banqueting Desserts. You will work on a 5 out of 7 day basis, with the shift pattern being 2 straights and 3 split shifts, based on a 48 hour a week contract.  10am-10:30pm with breaks available in the afternoon provided that work is completed, and 2 x straight shifts Early 8/10am depending on business levels-4pm or a Late 3pm -10:30pm. Food style is modern British using classical flavours , they use Low temperature cooking methods(water baths) but try not to over complicate the flavours or the plates. Food is sourced locally.
